Spicy Sesame Noodles

This is a tried and true, delicious pasta I have os an old xeroxed recipe. Quick ands easy meal. Add edamame or a salad.

Ingredients

1 pound thin linguine (try red or green lentil)

2 tablespoons sesame oil

1/4 cup creamy organic peanut butter

1/4 cup tamari or shoyu sauce

2 tablespoons wine vinegar

1 tablespoon minced fresh ginger

1/4 teaspoon crushed red pepper

1 sweet red pepper cut int thin slivers

4 scallions diced

Instructions

  1. Cook linguine according to package directions.

  2. Toss with sesame oil and set aside

  3. In a bowl combine peanut butter, shoyu, red wine vinegar, ginger and red pepper flakes.

  4. Toss pb combo with noodles

  5. Gently toss in red pepper and scallions.

  6. Serve warm. Makes 4 servings.
