Vegan Broccoli Balls

This is a recipe from Vegan Richa. These are a great appetizer or snack. The recipe recommends serving with marina or over spaghetti or in a sub. I prefer them as a finger food. The picture above is a double recipe

This makes 10-12 balls

Ingredients

1 teaspoon olive oil

1/2 cup finely chopped onion

1 large head of broccoli florets and tender stem

2 tablespoons fresh basil leaves or 1 teaspoon dried

1/2 teaspoon dried oregano

1/2 teaspoon garlic

1/2 teaspoon chipotle pepper powder

1/4 teaspoon ground black pepper

1/3 teaspoon salt

1 tablespoon nutritional yeast

1/4 cup almond meal (left over from making milk!) or almond flour

1/4 cup bread crumbs

1 chia seed egg, flax egg or egg replacer

Instructions

1) Preheat oven to 400 degrees. Heat oil in a pan over medium heat. Add onion and cook 3 to 4 minutes.

2) Pulse the broccoli and basil in a food processor until grated. This should make about 3 cups. Add to the pan. Add a dash of salt, mix and cook for 3-4 minutes until excess moisture is dried. Take off heat.

3) Add in spices, almond meal and bread crumbs. Mix well.

4) Make the chia seed egg ( 1 tablespoon of chia seeds mixed with 3 tablespoons of warm water and let sit for 2 minutes to gel) or flax egg ( 1 tablespoon ground flax seed mixed with 2.5 tablespoons water) or a packaged egg replacer prepared as directed. Add to pan and mix in.

5) Shape the mixture into balls. If the mixture is too crumbly mix in another egg replacer.

6) Place on parchment lined baking sheet.

7) Bake for 20-25 minutes or until crisp and golden on the outside. Turn the baking sheet after 15 minutes. Serve warm.
