Eggless Tofu Salad
This is a family favorite. My now adult kids make this same recipe regularly in their own homes. It is great in a sandwich or on a bed of greens.
Ingredients
1 pound extra firm tofu, cut into very small cubes
1/2 cup minced celery
4 tablespoons minced green onions
1 teaspoon turmeric
1/2 teaspoon curry powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
2 teaspoons celery seeds
2 tablespoons nutritional yeast
1 teaspoon salt
6 tablespoons vegan mayo
ground pepper to taste
Combine all ingredients in a bowl and mix well. Viola!
