Quick Green Bean, Tomato Salad

Late August is harvest time. Not only do green beans and tomatoes ripen together they taste great together. Here is a quick, tasty salad that never gets old.

Ingredients

1 pound of green beans

2 medium tomatoes or 12 cherry tomatoes halved

1/4 cup vinegar

1 tablespoon dijon mustard

pinch of sugar

salt and pepper to taste

Instructions

  1. Steam green beans until just tender.

  2. Slice tor cube tomatoes.

  3. Place vinegar, dijon mustard, salt, pepper and sugar in bowl and mix well.

  4. Gently fold green beans and tomatoes into dressing.

  5. Eat warm or cold.

  6. Enjoy!
