Sun Loaf

This is the first of several loaf recipes. Add a salad and some steamed veggies for a great meal.

I have been making this loaf for years. I am not sure where it originated.

Ingredients

1 1/2 pounds firm tofu

1/3 cup olive oil

1 chopped onion

3/4 pound grated carrots

1/8 cup tamari sauce or shoyu

1 1/2 tablespoons dill

1/2 tablespoon Spike

1/2 tablespoon salt

1 tablespoon basil

1/4 teaspoon cayenne pepper

1/2 cup sunflower seeds

Instructions

  1. Preheat oven to 350 degrees

  2. Food process, tofu. shoyu, oil and onion until creamy.

  3. Transfer to bowl and stir in remaining ingredients.

  4. Fill loaf pan.

  5. Bake at 350 degrees for 35 minutes. Rotate baking dish and bake another 35 minutes,

  6. Remove from oven. Cool for 10 minutes then serve.
