Tasty Vegan Stuffing

We have been making this recipe at holiday meals for over 10 years. It was from VegWeb.com by tojoyamoto. We added the gimme lean and made other minor changes. It is a crowd pleaser at my kids’ friendsgivings for vegan and nonvegans alike.

Ingredients

6 sticks of celery, finely chopped

1 medium onion, finely chopped

14 ounces of vegetable broth

3/4 cup olive oil

5 tablespoons shoyu or tamari sauce

3 ounces chopped pecans

1 tablespoon dried parsley

1 tablespoon dried rosemary

1 tablespoon dried sage

1 tablespoon dried thyme

small loaf of whole grain bread, torn into small pieces and dried (usually overnight on cookies sheet will do it)

14 ounce gimme lean ground sausage or vegan sausage of choice

Instructions

1) Preheat oven to 350 degrees F

2) In a pan, heat 2 tablespoons olive oil. Add celery and onion an saute until slightly translucent. Put sauteed vegetables in a bowl.

3) Using same pan add a drizzle of olive oil, crumble and brown gimme lean.

4) Add all ingredients to bowl except bread.

5) Fill a 9 by 13 inch casserole dish with bread pieces and pour bowl contents over them. Mix well and pat down flat.

6) Bake 35 minutes covered, then 10 minutes uncovered
