The Mighty Mac

This vegan burger is delicious without overshadowing all the fixings. My friend Stacey has been making this recipe for years. You can whip up 17 or so burgers to freeze. Good ingredients and less packaging than buying from the freezer section.

I often add vegetables to the recipe depending on what I have on hand. Carrots I will blend in with garbanzo bean mixture. Diced peppers or other veggies can be mixed in with oats.

You can substitute other beans and nuts for variety.

Ingredients

15 ounce can garbanzo beans, including liquid

1/2 cup vegetable stock or water

1 medium onion quartered

1 teaspoon sage

2 tablespoons shoyu or tamari sauce

1 teaspoon salt

1/2 cup walnuts, chopped

2 3/4 cup rolled oats, uncooked

1/3 cup whole grain flour

Instructions

1) Place garbanzo beans, bean juice, water and onion in blender. Blend until smooth. Pour into large bowl.

2) Add remaining ingredients and mix with a spoon.

3) Let rest 10 minutes to soak up the extra liquid.

4) Shape into patties. This makes about 17.

I freeze in glass containers with parchment paper squares between patties.

When frying frozen burgers, oil the pan well to avoid the burger sticking to the pan.
